Chef’s Secret: Super shrimp Po-Boy

"I ate last night at a new restaurant in Newport called Fluke. I had the most unbelievable, flavor-packed sandwich — the Fried Shrimp Po-Boy. It had some kind of slaw on it and a great dipping sauce.

I'd love to get the recipe to serve this for the Super Bowl at my house. It has to be one of the best sandwiches ever created!"

Tollefson's effusive appreciation of the po-boy sent me rushing to get the recipe for two reasons. First of all, we all want the perfect Super Bowl sandwich and this one sounds like a winner. Second, Fluke Wine, Bar & Kitchen is a new restaurant and sharing the recipe gives us an opportunity to learn more about the place.

Let's start with the sandwich. Po-boy is the name for a standard New Orleans sandwich made with French bread that's crusty on the outside and airy on the inside.


Kick off party with super dips

Served with crackers or chunks of bread or even sticks of healthy carrots or celery, hot dips are a favorite at holiday gatherings, cocktail parties, or casual get-togethers, and when it comes to Super Bowl Sunday, they are the best of the best.

Everyone I know has a favorite hot dip, so I asked readers to submit theirs. The following recipes have all been tested by family and friends and can be ready just in time for kickoff next weekend.

Chicken Fajita Dip

2 (8-ounce) packages cream cheese

1 package taco seasoning

1/2 onion, minced

2 cups chopped or shredded, cooked chicken or turkey

1 bottle taco sauce

2 cups shredded cheddar cheese

Chopped lettuce

Chopped and seeded tomatoes

Jalapeño slices

Black olive slices

Preheat oven to 350 degrees.

I really hope that its is not a land grab...as mentioned above by the Right Honourable Mr Johny Democracy MBE, PhD, QvC..etc..etc

But I belive reforms are needed to overhaul the native land regulations.

Its not really bringing in the desired returns to the Fijian landowners.

How about pricing their land rentals at current market prices?

After all, there seem to me lots of one sided complaints about the backwardness of the Fijians and their land.


Indonesian man dies of bird flu

One of the victim's neighbors was a pigeon breeder, but it was not immediately clear if that was the source of infection, said Health Ministry official Toto Haryanto.

"We're still investigating," he said. "We are not sure if any of those birds was sickened by the H5N1 virus."

The man, who came from the nearby industrial city of Tangerang, died Tuesday after being treated for three days at Persahabatan Hospital in east Jakarta, said Dr. Erna Tresnaningsih, another senior ministry official.

Indonesia has regularly tallied human deaths from bird flu since the virus began ravaging poultry stocks across Asia in 2003. The latest casualty comes days after the country's toll climbed to 100 - accounting for nearly half the worldwide total of more than 220.
