THE TIME 8 hours to overnight to marinate and about 20 minutes to cook NUTRITION HINT If you want to peel off even more calories and fat, use chicken breasts instead of thighs. THE RECIPE Stir-Fried Chicken with Honey and Ginger Serves 4 1½ to 1¾ pounds chicken thighs, boneless and skinless, cut into 1-inch slices 2 tablespoons canola oil 1 tablespoon light soy sauce ¼ cup sliced green onions Marinade: ¼ cup honey 2 tablespoons light soy sauce 2 tablespoons rice wine vinegar 2 tablespoons ginger, finely diced 1 .

This winter weather has been a bear, so I've decided to run some more comfort food recipes with a healthy twist. For all you cooks who have been making roasted chicken every Sunday for the past 20 years, I'm sorry if this recipe bores you. But I thought that some of the younger cooks out there might like to see a recipe that carefully details each step in the chicken roasting process that takes out some of the mystique of how we've always grown up eating delicious home-cooked chicken dinners, coming from something described as a carcass.These recipes are from the American Institute for Cancer Research, which develops some interesting recipes with ingredients you may not normally use, such as fennel and figs. Healthy meals require more preparation sometimes
OK, I've picked two recipes that require a little more work for this week's column, but I think they're going to have a big payoff. When you think of healthy food, or at least when I do, I usually think of still being hungry when I'm done eating. Vegetables are great and good for you and all, but I'm a meat and potato girl - give me something with substance. I got these recipes from www.foodfit.com, which is nice because it gives you the nutritional breakdown on most of these recipes too.The first recipe is for chicken pot pie, with a couple of substitutes that make it better for you. The second is for a risotto packed with healthy vegetables, but still has the carbs to help stick to your ribs. And those carbs are barley instead of rice, so it's got the whole grain and fiber that you should be eating anyway.I hope you enjoy these recipes, I might have to try these out at a dinner party some time soon, since a potpie is too much for two people, know matter how many substitutes are in it.

Well, Chuck D of Public Enemy weighed in a ways back and outlined a plan on how he would do the label the Russie & Rick built. So, Chuck D told us his thoughts on the rumor that Def Jam wasn't going to (immediately) fill the position left by Jay-Z. He told AllHipHop.com, “It's really disappointing that Universal decides not to replace the vacated Def Jam job. Its sort of expected, and a primary reason why the music business has collapsed.
Racist email rocks railway from RailCorp head David Carroll
You asked to be here. So accept the country you accepted." Mr Carroll has been suspended pending an internal investigation. It is not yet known if Mr Carroll was the author of the email sent to 15 people, including the secretary of his boss. The message was forwarded by one of that group and has since been circulating like wildfire around the work force. "No one can believe someone in his position would send such rubbish, it's racist beyond belief," said a transit officer who saw the email. Mr Carroll, who served in the NSW Police for 20 years, last year won a RailCorp Employee Excellence Award. It is a headache for chief Vince Graham, who has made it his mission to stamp out misogyny and bullying at the railway. Six RailCorp managers - including one who ran a prostitution service from Central station - were sacked last year for sexual harassment and pornography offences.

And after USC's demolition of favorite son Illinois in the Rose Bowl Tuesday, you've got to wonder if the folks in Pasadena were kicking themselves hard (as they should have been) over the fact that they passed up the chance to match the Trojans and Dawgs because of their desire to cling to a traditional but antiquated Pac 10/Big 10 lineup. I wasn't alone among Georgia fans a couple of weeks ago when I said amid the nonstop media buildup of Hawaii that I smelled another Boise State overhype, but that didn't stop ESPN, Fox and, yes, even the local media from portraying the team from the islands as some juggernaut that the Dawgs would be lucky to even slow down.
