For winter, the pot pie

Editor's note: On Pie Day last week, we brought you recipes for several dessert pies. Today we bring the favorite of at least one Pie Day correspondent and ours, too: chicken pot pie, slimmed down by the Food Network's Ellie Krieger.

The Pennsylvania Dutch slippery noodle pot pie with large noodles in a brown sauce is much revered around these parts.

Alas, it's an anomaly in the world of the humble pot pie.

It is the version topped with crust - whether a true pastry or a flaky phyllo dough - that is most widely recognized.

"Pot pie is one of those very traditional comfort foods everybody loves, especially in the wintertime when people are looking for heartier types of fare," said James Woltman, chef at Stocks on 2nd.

Stock's recently catered a home party where Woltman served individual chicken pot pies enrobed in pastry paired with other wintry entrees such as beef stew and lemon butter poached cod.

In another week, most of us will be gathering around the table of friends or family to observe an American tradition. In most Indiana dining rooms and kitchens, that probably will mean carving up a turkey, whether it be in roast form or basted like a sunbather on a Tahitian beach.But if you could eat at any restaurant in Indiana — for that matter the Midwest — on Thanksgiving, I'd recommend the Strongbow at the southeast edge of Valparaiso on U.S. 30.For years, I had heard from relatives about its legendary service and dining experience. I'd heard about the demand for special events and receptions there.I'd also heard the price was moderate and the satisfaction was guaranteed.What I found when I went there one Thanksgiving was a restaurant with a home cooking touch. Sure, there was the customary turkey and tended hot table for the meats, but if you're not a turkey aficionado like myself, the trimmings are what matters.


NFL-city chefs tip hats to one another in tasty competition

Sixteen years ago, Wayne Kostroski asked 29 of his chef friends to come to Minnesota midwinter to cook at the Super Bowl. Kostroski, a longtime Minneapolis restaurateur and then-president of the Minnesota Restaurant Association, was creating what would become a Super Bowl mainstay, Taste of the NFL, the Party With a Purpose. "I got 28 yesses," Kostroski said. One chef already had a commitment, but the others bought their tickets, brought their food and pulled together a gala event for 1,000 people that netted $90,000 for Kostroski's passion, hunger relief. .

December 11, 2007 - After a couple storms had blown through Colorado and produced heavy snow across the state things are beginning to die down. The latest storm is now moving its way out of Colorado and it looks like we are in store for slightly warmer weather over the next couple days.

The past two storms dropped many inches of snow across the Front Range and the Eastern Plains. These same storms managed to drop several feet of snow to the mountains. We saw snow totals of 2-5 feet of snow in the mountains and anywhere from 3 inches to 8 inches of snow since Friday.


Migrant baby boom cost to NHS soars

The cost to the NHS of providing maternity services for foreign-born mothers has risen to more than £350 million a year, it has been reported.

Record levels of immigration have pushed the cost up by £200 million in the past 10 years, according to analysis by the BBC.

And critics say the Department of Health has been "caught by surprise" by the rising birthrate, with some maternity wards forced to close their doors to expectant mothers.

Spending on maternity services has risen from £1 billion a year to £1.6 billion since Labour came to power.

And while a decade ago one baby in eight (12.8%) was delivered to a foreign-born mother, figures from the Office of National Statistics show that in 2006 there were 154,000 births to foreign-born women, making up about one in five (21.9%) of the total births in the UK.

Note: Italians take guanciale for granted, but it's fairly new to American kitchens. Almost all the recipes in American cookbooks call for ordinary bacon, which is too smoky, or Italian pancetta, which is too lean. Guanciale, which means pillow, a description of its shape, has an especially rich, sweetly porky flavor and a buttery texture.
