Serve up cheesy enchiladas
In the time it takes some traditional enchiladas to bake, this shortcut preparation can make it all the way to the table, with melted cheese on top. For this dish, we like using Hatch brand enchilada sauce, which is available at Whole Foods Markets and through online purveyors. Serve with a salad of butter lettuce, chunks of avocado and orange sections, dressed with a citrus-juice vinaigrette. Looking for a glass of wine to drink with these enchiladas? For many people, Super Bowl Sunday offers a one-day food pass. Fat-laden dishes that might be forbidden the rest of the year are almost a rite of passage at parties on the biggest pro football day of the year. And nachos seem the quintessential Super Bowl snack. The cheese, the chips, the beans combine to offer a marriage of flavor and texture that make an irresistible treat. I’m not referring to the oh-so-scary style sold at most ballparks and movie theaters. The ones topped with that bizarre orange goop. I mean the classic Tex-Mex munchie that’s made with 100 percent real cheese. The kind that several Texas-Mexico border-town cafes claim to have invented during World War II. Most accounts agree that it was first concocted in Piedras Negras, Mexico. Broadcast journalist Linda Ellerbee offers an explanation of how this super-snack was born in her memoir, "Take Big Bites" (Berkley, $14, soft cover).
Creamed Filled Chocolate Cupcakes
Prepare cake mix according to directions on package. Bake in paper lined cupcake pans. Cool. To make vanilla filling, beat shortening with egg white, vanilla and 1/2 cup of confectioners' sugar until blended. Beat in remaining sugar until thick. Place a number 11 pastry tip on a pastry bag and fill with the creamy vanilla mixture. Place the cup cakes in a row, so that they are easy to fill. Hold the pastry bag straight up and down, then push tip into the center of the cupcake until it is to the ring of the bag. Squeeze bag firmly until there is a bulge in the cake. This will be approximately 1 tablespoon of filling. Remove bag and continue to fill the remaining cupcakes. To make chocolate glaze, melt chocolate and shortening in a medium-sized bowl over simmering water in a saucepan. Remove from heat beat in confectioners sugar and water with a wire whisk to make a smooth mixture.
Winter Warm-Up
The Winterfest Cafe will open at 10 a.m. Saturday, at St. John's School in Lambertville, beginning 61/2 hours packed with activities including historical tours, performances by local students and members of the Downtown Performing Arts Center and, a festival favorite, the Winter Festival Parade from noon to 1 p.m. The march and float presentations will start at New Hope-Solebury High School on Bridge Street and continue across the bridge into Lambertville with music by performers including the Uptown and Greater Kensington String Bands and the Lochranoch Pipe Band. "The parade is a can't-miss for visitors because it's a family thing. Right after the event, there are a number of children's events at St. John's, so I think Saturday from 12 on will be a great attraction for children," said Mike Quinn, who is on the board of directors for Twin Rivertown Projects Inc., a nonprofit corporation of New Hope and Lambertville business owners, residents, and volunteers that produces the festival.
