One Great Dish: Versatile Pork Carnitas are quick way to a meal

I adore the mohair scarf and the fuzzy warm boots, but my favorite present this Christmas was a big box of pork from Tim Fischer's farm in Waseca, Minn. It's free of antibiotics and hormones. It's amazingly versatile as it figures its way into favorite recipes usually made with chicken or beef.

Take these carnitas, a recipe from Claribel Gonzolez, who moved with her family from Guatemala to Minneapolis some 20 years ago. She also makes carnitas with turkey thigh, beef or lamb, but I think they're best with pork.

Carnitas are often served over rice and paired with black beans and are terrific tossed with pasta, stuffed into a crusty bun, rolled into a flour tortilla, layered into nachos or piled on pizza. Best of all, they are ready in just minutes for a quick meal or can be cooked ahead and reheated without any fuss.

The Garner-Afflecks Are House-Hunting and Working Out

Ben Affleck and Jen Garner went house hunting in LA yesterday perhaps for a bigger place to fill up with... a playroom? The day before Jennifer Garner was seen with her trusty backpack and one of Violet's many favorite blankets on a trip to the Kidnasium instead of their usual park. Jen already has plenty of experience getting fit so we're not surprised she's passing on her workout ethic to little Violet. Between that and her already sensible eating habits, Little Miss Affleck could turn out to be quite the health nut someday, just like her mom.

Party foods great for game day

Well, it's almost over except the playing and the shouting.

I consider the holidays as that time from Thanksgiving weekend until the Super Bowl is over. Now, for at least two weeks (until Valentine's Day), we can live in a plain, normal way. However, let's talk about some party foods that are great for nibbling during the game.

The first is a three-ingredient dip that I have been making since 1975. I happen to remember the date because someone brought it to a cast party or a rehearsal for the Longview Community Theatre's production of "Fiddler on the Roof." Funny, isn't it, how we remember particular dates when they are related to something that is important to us. Shirley Hunt Eddy brought this for us all to enjoy.

Glorified Bean Dip

2 large cans Frito Bean Dip

8 ounces grated Cheddar cheese

4 to 5 green onions, chopped, tops included

1/2 cup hot sauce (I still prefer Albert's, which is made in Kilgore.)

Mix and place in a 2-quart casserole.

Varsha Gandhi spent her Christmas holidays sick in bed, so she took extra precautions to ensure that it wouldn't happen again this season.

She and her husband, Andy, visited the Greater Killeen Free Clinic on Monday to get vaccinated against the flu, the first time either Killeen resident has received the shot.

"A lot of people have been complaining that they're getting sick," Andy Gandhi said.

His's observation is an accurate one. The Centers for Disease Control and Prevention reported "widespread" influenza activity in Texas for the week of Jan. 13 to 19, which means there have been documented cases in at least half the regions of the state. In Bell County alone, there were 47 confirmed cases that week.

Flu surveillance relies on reports from select local health departments, clinics and laboratories, so the numbers reflect only those who see an approved doctor or health professional.

But the atmosphere is still delightfully civilized, almost old-fashioned, with its fresh flowers, oil paintings and pristine white tablecloths against a backdrop of claret, ruby and gold. It's possible to conduct a conversation without raising your voice, and employees are solicitous. The trend toward casual gets just a nod; jackets for men are recommended, rather than required, but jeans are a no-no.

As much of a perfectionist as ever, executive chef/owner Scott Martin Cutaneo still holds sway, joined recently by chef Aaron Barredo. Cutaneo, who is often seen on TV these days, trained with such stellar chefs as Daniel Boulud and Alain Ducasse. He has cooked in Europe as well. His continental flair is evident in such classics as escargot in pastry with Brie ($14) and a perfect white truffle risotto ($18) with undertones of Parmesan.
